Justine's Keto Hot Cross Buns Baking Instructions

Prep & Proof Time: 35 Minutes
Bake Time: 27 Minutes
Servings: 10 Buns. Raw Weight Approx. 75g. Cooked Weight 64g

What you will need

  1. 240ml Warm Water ( 100ml of boiling and 140ml of cold is perfect )
  2. 7g Fast Acting Dried Yeast
  3. 2 Large Eggs
  4. 30g Olive Oil
  5. 15g Orange Zest, Finely Grated
  6. 50g Dried Pams Golden Berries - You Can Chop Into Smaller Pieces For Even Distribution In Buns
  7. 323.50g Justine's Keto Hot Cross Bun Mix
  8. Optional For Piped Crosses: Justine's Keto White Chocolate melted with a touch of Coconut Oil

    Instructions

    • Add to your electric mixing bowl, 100ml of boiling water and 140ml of cold water (approx. 45 - 50C) & give it a quick mix with a spoon, so that there are no hot pockets of water.
    • Add to this, your eggs, olive oil & yeast, and orange zest & give it a quick whisk.
    • Add in Justine’s Keto Hot Cross Bun Mix & chopped golden berries & mix with the standard hook for 10 seconds, then switch to the dough hook and mix for approx. 5 minutes.
    • Divide into 10 rolls of approx. 75 g raw weight. Roll each portion with the palm of your hand into a ball on a bench top and then gently tuck any loose ends & loose fruit pieces that might come out underneath to create a smooth top.
    • Put each rolled portion on a greaseproof lined tray & prove in a warm place for 25 mins up to 40 mins
    • Preheat the oven & bake at 190 degrees for 27 mins
    • Serve & enjoy!

    Storage. Store Rolls in an airtight container or resealable bag. Will keep for 5 days.

    Freeze: Freeze baked rolls for up to 3 months. Defrost and heat in the oven and serve.

    Lovely texture and taste, just not spicy enough for me.

    Good flavour, consistency needs work

    I think they nailed the flavour and they're still a delicious, high protein Easter delight for us but with my second packet I think I'll try and bulk it with some coconut or almond flour to give a less elastic texture (presumably from it being primarily wheat gluten). Still think good flavour and desirable macronutrient spread considering higher protein vs higher fat.

    Loved these hot cross buns , super easy to make , the smell and taste were amazing . They did puff up beautifully in the oven but shrunk down when they cooled as keto bread usually does . Amazing toasted the next day !

    Yum! So nice to have my own hot cross buns for Easter. I changed it up a little and made the dough in my breadmaker, and then cooked them. Easy peasy!

    I made my Hot Cross Buns this morning and they're yummy! However, I don't use yeast very often, and discovered that my yeast was way out of date, but had to go ahead, as I don't go out to the shops on a whim.
    My buns rose, and were springy and looked amazing when finished cooking, but then they deflated and looked like giant raisins! They still taste beautiful, and are nice and chewy.
    I will buy another packet, and in the meantime, will get some fresh yeast!
