60 Second Single Serve Keto Carrot Cake Baked Porridge

This single serve keto breakfast recipe is super easy to make and bakes in just 60 seconds! This keto carrot cake baked porridge is made by combining our Justine's Keto Porridge Mix with a few simple ingredients, microwaving for 60 seconds then lathering a creamy & delicious 3-ingrent keto cream cheese mixture on top! The result is a fluffy and nutritious breakfast that tastes just like carrot cake without the added carbs, sugar or gluten! 

 

Ingredients 

For the carrot cake baked porridge

  • 2 Tbsp Justine's Keto Porridge Mix
  • 1 Tbsp erythritol (or other keto-friendly sweetener)
  • 1/2 tsp baking powder
  • 1/4 tsp nutmeg
  • 1/4 tsp cinnamon
  • 1 Tbsp melted butter
  • 1 egg
  • 1/2 tbsp chopped walnuts 
  • 1-2 Tbsp grated carrot

For the cream cheese topping

  • 1 tbsp cream cheese
  • 1 Tbsp greek yogurt 
  • 1 tsp erythritol (or other keto-friendly sweetener)
  • extra chopped walnuts and grated carrot (optional)

 

Method

  1. In a microwave-safe mug or bowl, mix together all ingredients for the carrot cake baked porridge until well combined. 
  2. microwave for 60 seconds
  3. While the porridge is in the microwave, create the cream cheese topping. In a small bowl, combine the cream cheese, greek yogurt, and eryrithrol and mix until smooth 
  4. remove the baked porridge from the microwave and spread the cream cheese mixture on top, then sprinkle additional chopped walnuts and grated carrot if desired.
