Ingredients
- 400g Vanilla Probiotic Yogurt
- 150g Light Cream Cheese
- 80g Cookies ‘n Cream Protein powder
- 1 tbsp SF Sweetener
- 1 egg
- 9 Justine's Choc Chip Mini Keto Protein Cookies
Method
- Preheat your oven to 200°C
- Lightly grease silicone a muffin pan.
- Place a cookie in the base of the muffin pan and microwave for 30-40 seconds.
- Using the back of a spoon, push the cookies into the muffin pan to create a base.
- Place all ingredients in a large bowl and whisk really well until smooth and creamy.(or blend)
- Pour even amounts into the prepared muffin pan.
- Bake for 25-30 minutes or until set and lightly golden.
- Cool in the muffin pan, then refrigerate for at least an hour.
- To serve, melt some keto dark chocolate and drizzle over the top. Sprinkle with a extra crushed mini protein cookies on top
