Ice Cube Tray Rocky Road Bites (Low-Carb & Keto-Friendly!)

Rocky road just got a low-carb glow-up! This ice cube tray hack (thank you, TikTok) makes it ridiculously easy to whip up bite-sized rocky road treats—no mess, no fuss. Just layer your favourite mix-ins, pour over melted chocolate, and pop them in the fridge to set. That’s it.

Whether you love a quick sweet fix, enjoy meal prepping treats, or just need an excuse to make rocky road, these sugar-free, keto-friendly bites are a must-try.

Ingredients

(Makes 12 bites, depending on tray size)

  • 200g sugar-free chocolate
  • 2 Justine’s Keto Crunch Cookies, roughly chopped
  • ½ cup sugar-free marshmallows, chopped into small pieces
  • ¼ cup sugar-free lollies, chopped
  • 1 tbsp coconut oil (optional, to help the chocolate melt smoothly)


Method

  1. Chop your Justine’s Keto Crunch Cookies, marshmallows, and sugar-free lollies into small, bite-sized pieces. Set aside.
  2. In a microwave-safe bowl, melt your sugar-free dark chocolate with coconut oil (if using) in 20-second bursts, stirring in between until smooth.
  3. Add a few pieces of cookie, marshmallow, and lollies to each section of the ice cube tray.Pour melted chocolate over the top, filling each section completely. Gently tap the tray to remove air bubbles and ensure the chocolate settles evenly.
  4. Place the tray in the fridge for 1-2 hours, or until firm. Pop out the bites and enjoy your low-carb rocky road bites!
