This dessert has three simple components: the protein cookie crust, the chocolate mousse, and the topping. In just 10 minutes, you’ll have a better-for-you indulgence ready to enjoy! Enjoy this rich, keto-friendly dessert that's perfect for any occasion!

Ingredients

(Makes 6 servings)

For the Mousse

  • 237 ml Heavy Whipping Cream
  • 22 g Unsweetened cocoa powder, sifted
  • 1/4 Cup powdered sweetener of choice
  • 1 teaspoon Vanilla extract
  • 1/4 teaspoon kosher salt
  • 3 egg whites for a lighter mousse

For the Crust

For the Topping

  • 1/2 cup heavy cream
  • 2 tbsp powdered sweetener of choice

Method

Step 1: Make the Cookie Crumb Crust

  1. In a bowl, mix Justine’s Keto Protein Cookie Crumbs with melted butter.
  2. Divide the mixture evenly between 6 dessert cups, pressing it down to form the crust.

Step 2: Prepare the Keto Chocolate Mousse

  1. Whisk the heavy cream until it forms stiff peaks.
  2. Add cocoa powder, powdered sweetener, vanilla, and salt. Whisk until just combined.
  3. For a lighter mousse, whisk the egg whites separately until stiff peaks form, then gently fold them into the mousse mixture.
  4. Divide the mousse evenly into your dessert cups over the cookie crust.

Step 3: Add the Topping

  1. Beat the heavy cream with powdered sweetener until stiff peaks form.
  2. Spoon or pipe the whipped cream over the mousse.
  3. Let the dessert set in the refrigerator before serving.
