Ingredients
(Makes 6 servings)
For the Mousse
- 237 ml Heavy Whipping Cream
- 22 g Unsweetened cocoa powder, sifted
- 1/4 Cup powdered sweetener of choice
- 1 teaspoon Vanilla extract
- 1/4 teaspoon kosher salt
- 3 egg whites for a lighter mousse
For the Crust
- 10 tbsp Justine's Keto Protein Cookie Crumbs (or more to taste)
- 1 -2 tbspm Butter, melted
For the Topping
- 1/2 cup heavy cream
- 2 tbsp powdered sweetener of choice
Method
Step 1: Make the Cookie Crumb Crust
- In a bowl, mix Justine’s Keto Protein Cookie Crumbs with melted butter.
- Divide the mixture evenly between 6 dessert cups, pressing it down to form the crust.
Step 2: Prepare the Keto Chocolate Mousse
- Whisk the heavy cream until it forms stiff peaks.
- Add cocoa powder, powdered sweetener, vanilla, and salt. Whisk until just combined.
- For a lighter mousse, whisk the egg whites separately until stiff peaks form, then gently fold them into the mousse mixture.
- Divide the mousse evenly into your dessert cups over the cookie crust.
Step 3: Add the Topping
- Beat the heavy cream with powdered sweetener until stiff peaks form.
- Spoon or pipe the whipped cream over the mousse.
- Let the dessert set in the refrigerator before serving.
