Justine's Keto Christmas Cake Ingredients
- 110g Butter Softened
- 5g (1t) Almond Essence
- 70g Fresh Orange Zest (Or Try A Mixture Of Both Orange & Lemon Zest)
- 200g (4 Eggs)
- 10g Brandy Or Rum If You Want To Soak Fruits For 1 - 3 Days Before
- 100g Ocean Spray Craisins Reduced Sugar
- 100g Walnuts
- 273.12g Justine’s Keto Fruit Cake Mix
Justine's Keto Christmas Cake Method
Preheat oven to 180 degrees
Mix butter in an electric mixer until pale and fluffy.
Add the almond essence along with fresh orange zest & mix again.
Add the eggs & mix till just combined.
Add the craisins & walnuts & mix till combined.
Add in Justine’s Keto Fruit Cake mix and mix until well combined.
Line an 8 inch/20cm round baking tin with baking paper and butter the sides well.
Spoon into the prepared tin and bake at 180C/350F for 30 minutes, or until a skewer comes out clean when poked in the middle of the cake.
Cool. Remove from Tin.
Serve with whipped cream & grated nutmeg or your choice of condiments for a ketolicious festive treat.
Suggestions:
Try poking the cake when comes out of the oven & sprinkle lightly or generously with brandy or rum if you want a boozy flavour. The choice is yours!!!
Try adding in 100g of almonds instead of the walnuts or nuts of your choice.
Try substituting the craisins with 100g of goji berries.
This cake will keep well for 3- 4 weeks. Store in an airtight container.
