We've taken ours a step further by creating this Keto friendly almond croissant mug cake - an easy single serve recipe, with minimal dishes and ingredients. Best of all, it's ready to eat in just 5 minutes! Using our Justine's Keto Victoria Sponge Cake Mix as the base, keeps this recipe keto friendly and provides a "fool-proof" mug cake base with less hassle and fewer ingredients. 

We love that this recipe is single serve, quick and easy to make . It's the perfect sweet treat to satisfy your cravings in just minutes (because who has time to cook a whole cake when you need something sweet now?), perfect for dessert, afternoon tea, or just because! The best part is that this recipe, unlike most other mug cakes, is actually pretty healthy – it's ultra-low carb, keto, sugar-free, gluten-free, and provides a decent amount of protein to keep you satisfied!

 

Ingredients:

  • 1/4 cup Justine's Keto Victoria Sponge Cake Mix
  • 1 egg
  • 1 tsp oil
  • 1 tbsp almond butter
  • 2 tsp sugar-free maple syrup
  • A dash of almond extract
  • Almond slivers (toasted, optional)
  • Powdered sweetener (optional)

Method:

  1. In a microwave-safe mug, mix together the Justine's Keto Victoria Sponge Cake Mix, oil, and one egg until well combined.
  2. In a small bowl, create the keto "frangipane" by combining the almond butter, sugar-free maple syrup, and a dash of almond extract. Mix until smooth.
  3. Spread the almond mixture over the cake batter in the mug.
  4. Sprinkle almond slivers on top (toast them in a dry pan first if desired).
  5. Microwave the mug for 1 minute.
  6. Optionally, sprinkle powdered sweetener on top for that classic almond croissant finish.
