Ingredients for Keto Cinnamon Scroll Hot Cross Buns:

  • 1 pouch (323.50g) Justine's Keto Hot Cross Bun Mix
  • 240ml Warm Water (100ml boiling, 140ml cold)
  • 7g Fast Acting Dried Yeast
  • 2 Large Eggs
  • 30g Olive Oil
  • 15g Finely Grated Orange Zest
  • 50g Dried Pams Golden Berries (optional: chop into smaller pieces)
  • 1/3 cup erythritol (or sweetener of choice)
  • 2 tsp cinnamon 
  • 1/2 cup Justine's keto white choc chips
  • 1-2 tbsp coconut oil

Instructions:

  1. In an electric mixing bowl, combine 100ml of boiling water and 140ml of cold water (around 45-50°C). Mix briefly with a spoon to ensure there are no hot pockets of water.

  2. Add the eggs, olive oil, yeast, and finely grated orange zest to the water mixture. Whisk everything together.

  3. Incorporate Justine's Keto Hot Cross Bun Mix. Mix with the standard hook attachment for about 10 seconds, then switch to the dough hook and continue mixing for approximately 5 minutes until a smooth dough forms.

  4. Roll the dough out to form a rectangle, approx 0.5cm-1cm thick

  5. Mix together erythritol and cinnamon and sprinkle evenly over rolled out dough. If using dried fruit, sprinkle this on now too.

  6. Roll dough up tightly from the long side. Use your hands to gently elongate the roll a little, if it needs evening out. Using a sharp knife, slice dough into 10 rolls
  7. Place each roll on a tray lined with greaseproof paper. Allow the buns to proof in a warm place for 25 to 40 minutes.
  8. Preheat the oven to 190 degrees Celsius (375 degrees Fahrenheit). Bake the buns for 27 minutes or until they turn golden brown.

  9. Once baked, let the buns cool slightly. If desired, drizzle them with melted Justine's Keto White Chocolate mixed with a touch of Coconut Oil.

  10. Serve and savor the deliciousness!

Storage: Store the rolls in an airtight container or resealable bag, where they will remain fresh for up to 5 days.

Freezing: To freeze the baked rolls, allow them to cool completely. Then, place them in a freezer-safe container or bag and freeze for up to 3 months. When ready to enjoy, defrost and heat the rolls in the oven before serving.
