Keto Cookie Crumb Caramel Cups
INGREDIENTS
Keto Cookie Crumb Base:
1.5 cups of Justine’s Keto Cookie Crumbs
Add 60g melted butter
Press into silicone mould and refrigerate while you make your caramel
Keto Caramel
You could use any recipe I used the following which did make it a bit darker so you can’t see it much in the photos but you sure can taste it
1/3 cup of Justine's Keto Erythritol
1/3 cup keto brown sugar
3 tablespoons of butter
1 cup of cream
1/2 tsp vanilla extract
Bring to the boil, then take of the heat keep doing this while continuously stirring, back to heat. If you have made caramel before you know it’s a bit of a process .
This particular method made a dark caramel like toffee
Pour over base and back into refrigerator
Keto White Chocolate Topping
Tsp of coconut oil
Melt and pour over top
Garnish and back into refrigerator
