Keto Ferrero Rochers
Indulge in these rich, chocolatey "ferrero rocher" protein balls made with Justine’s Cookies! Packed with healthy fats from coconut oil and nuts, and finished with a smooth chocolate coating, they’re the ultimate treat to satisfy your sweet tooth while keeping it keto-friendly.
Ingredients
- 6 X Mini Justine’s Protein Cookies of your choice (or 2 full size cookies - we recommend Choc Chip, or Peanut Butter Choc Chip!)
- 120g Peanuts
- 1 Tbsp Cocoa Powder
- 3 Tbsp Sugar Free Chocolate spread
- 150g Justine’s Keto Dark Choc Baking Chips
- 150g Justine's Keto White Choc Baking Chips
- 1 Tbsp Coconut oil
- 50g Chopped nuts
Method
- In a food processor wizz together cookies & peanuts until they forma crumb-like texture.
- add cocoa & chocolate spread to the crumb mixture & mix together until well-combined
- Roll mixture into balls and place in the fridge or freezer to harden while you prepare your chocolate
- In a microwave safe bow, Melt dark and white chocolate chips and coconut oil together in 30 second increments until smooth
- Mix chopped nuts into the chocolate mixture
- cover balls in chocolate mixture and set back in the fridge until ready to enjoy.
