Ingredients

3 tbsp butter, melted

250g cream cheese

1 cup cream

1 cup sugar-free chocolate, melted

1 cup alternative sweetener (like erythritol)

2 tsp vanilla essence

Optional garnish: melted chocolate or grated chocolate
Method

Blend the Justine’s cookies in a blender or food processor until they form fine crumbs.

Add the melted or soft butter to the cookie crumbs and mix until well combined.

Press the mixture firmly into the base of your chosen moulds or ramekins to form the crust.

In a separate bowl, whip the cream cheese, cream, alternative sweetener, and vanilla essence together until light and fluffy.

Gently fold the melted sugar-free chocolate into the whipped mixture until fully incorporated.

Spoon the filling over the prepared cookie crusts, smoothing the tops.
