
Keto Ginger Crunch Slice
Remember that classic New Zealand ginger crunch slice from your childhood? This keto ginger slice brings back all those nostalgic flavours without the extra carbs or sugar. Featuring our Justine's Keto Ginger Crunch Cookies as the base, this slice contains just 6 ingredients and requires no oven! it's the perfect fuss-free easy treat to make when you're craving something sweet!
INGREDIENTS
- 3 Justine's Keto Ginger Crunch Cookies
- 4 tbsp butter, melted
- 400ml cream
- 50g butter
- 1 cup allulose or sweetener of choice
- 2 tbsp ginger
METHOD
- To make the base, blend 3 Justine's Ginger Crunch Cookies until they resemble a fine crumb. Add 4 tbsp melted butter and blend again until well incorporated.
- Press the cookie mixture into a lined, or greased, baking tin and place in the fridge to harden
- Create the filling by combining cream, butter, and sweetener. microwave for 2 minutes, stir, then microwave further for 30 second increments, stirring between, until it thickens like a caramel.
- Once the filling has thickened, stir in ginger and pour over cookie base. Feel free to add optional toppings (ie: more ginger cookie crumbs) if desired.
- Place back in the fridge to set overnight, then slice & enjoy!
