Keto Lemon Blueberry Coconut Baked Noats

Bursting with coconut goodness from our Justine's Keto Porridge Mix, these baked "oats" are a harmonious blend of sweet and summery flavours.
This is the perfect easy breakfast as it is packed full of fibre, super quick to make if you choose to use the microwave method, and, it only uses one bowl!
Ingredients
- 4 Tbsp Justine's Keto Porridge Mix
- 2 Tbsp keto sweetener
- 1 egg
- 1 tsp baking powder
- 2 Tbsp melted butter
- 1 tbsp keto friendly milk
- 1/2 - 1 lemon zested
- 8-10 blueberries (or more if desired)
- coconut cream for topping (optional)
- coconut flakes or shreds for topping (optional)
Method
- in a small heatproof bowl or ramekin, mix together the keto porridge mix, sweetener, baking powder, egg, melted butter, milk, and half the lemon zest until well combined
- push blueberries into the mixture and reserve half for topping.
- cook in the microwave for 2 minutes, or in a preheated 180 degree oven until golden brown
- once cooked, top with the remaining blueberries and lemon zest. Feel free to also add coconut cream and coconut flakes if desired.
