KETO LOW CARB CONFETTI BIRTHDAY CAKE

The lovely Adele created this ketolicious Keto Confetti Cake using our versatile, easy prep low carb Keto Victoria Sponge cake mix!
Great for keto birthdays, desserts, or when guests drop in. Stunning to take to dinner parties too & impress your hosts!
What you will Need :
1 packet of Justine’s Victoria Sponge Cake Mix
1/2 cup of confetti sprinkles (create your own or add store-bought)
Keto Low Carb Icing:
1 tub of cream cheese at room temp
1 cup Justine's Erythritol powdered in blender
70g room temp butter
Keto Low Carb Confetti sprinkles (make in advance)
1 cup Justine's Erythritol powdered in blender
1 egg white
1/2 t vanilla extract (I used Heilala)
Food coloring drops
For the low-carb keto cake, follow the directions on the back of the Keto Victoria Cake Mix, super easy step by steps, and takes 15 mins max to prep.
Mix all ingredients together for the icing and whip until glossy and smooth.
For the sprinkles, In a medium bowl, whisk together the sweetener, egg white, and vanilla extract. Mix until the mixture forms a thick paste. Add some drops of water if required to create a paste
Divide into several smaller bowls and add a little food coloring until the desired color is achieved.
Drizzle onto baking paper in thin long lines (think of snakes)
Leave for at least 24hrs at room temp until set and hard.
Once set, cut/crack into desired lengths, mix all together and store in a air tight container.
