Ingredients
- 3 Justine’s Keto Ginger Crunch Cookies
- 250g cream cheese
- 1 tsp vanilla extract
- 1/2 tsp of sea salt
Method
- Whizz up the cookies to resemble a fine crumb
- Add half of the mixture to the bottom of your jar, glass, or ramekin
- Leave the other half set aside
- For the cheesecake filling, in a blender add the remaining ingredients & whizz that up until I looks like a mousse consistency
- Add this layer to your crumb and set in the fridge for 2-4 hours
- Once set sprinkle over the remaining cookie crumb & enjoy!
