
Low-Carb Wagon Wheel Slice
Remember wagon wheels? We've given them a low carb, high protein makeover! With melty chocolate, a soft marshmallow layer, a fruity burst of sugar-free jam, and a cookie crust using Justine’s Choc Chip Protein Cookies, this slice hits all the right notes without the sugar crash.
Ingredients:

3 Justine’s Choc Chip Protein Cookies, crumbled

70g unsalted butter, melted

⅓ cup sugar-free jam

~100g sugar-free marshmallows (approx. 30 standard-sized pieces)

~150g sugar-free dark chocolate (or your favourite low-carb chocolate), melted
Method:

Preheat oven to 160°C (fan bake).

In a bowl, mix crushed Justine’s Choc Chip Cookies with melted butter until fully combined.

Press the mixture into a lined baking tray or loaf tin, flattening with the back of a spoon.

Bake for 10 minutes, then press the base down again gently to create a flat surface.

Allow the base to cool completely before spreading your jam over in an even layer.

Place sugar-free marshmallows over the jam—don’t worry if there are small gaps, they’ll melt together.

Return the tray to the oven for another 10 minutes, or until the marshmallows soften and begin to merge. Remove from oven and gently press down again to level.

Once cooled, pour melted chocolate over the top and spread evenly.

Pop the slice into the fridge to set completely (about 1–2 hours), then cut into bars or squares and enjoy!
