Mini Strawberry Keto Protein Cheesecakes
These adorable mini strwberry keto protein cheesecakes by Karina (@cleaneats_breakfasttreats on Instagram) are the perfect little dessert that tick all the boxes!
Using our mini keto raspberry white choc protein cookies as a base makes these cheesecakes super easy to whip up while adding a protein boost! the other ingredients add delicious texture, flavour and extra protein but still are low carb and low calorie enough to satisfy your sweet tooth without kicking you out of ketosis.
Ingredients
- 300g Vanilla Yogurt
- 250g Light Cream Cheese
- 2 tbs Antioxidant Blend
- 80g Strawberry protein powder
- 1 tbsp SF Sweetener
- 1 egg
- 4- 9 Justine's Keto Mini Raspberry White Choc Protein Cookies
Method
- Preheat your oven to 180°C
- Lightly grease silicone muffin pans.
- Place a cookie in the base of the muffin pan.
- Add all ingredients in a large bowl and whisk really well until smooth and creamy.(or blend)
- Pour even amounts into the prepared muffin pan.
- Bake for 25-30 minutes or until set and lightly golden.
- Cool in the muffin pan, then refrigerate for at least an hour.
- To serve, top with some keto jam, and a fresh strawberry slice
