"Happy Monday! Can’t believe I haven’t shared this with you guys yet 🤦🏻♀️ I was having a play in the kitchen with some leftover PB cheesecake mixture and this was the end result. Sooooo good and definitely something I’ll be making again.

Ingredients
- 10 Justine's mini keto protein cookies.(peanut butter choc chip, choc chip & raspberry white choc flavours all work great for this!)
- 250g cream cheese
- 1/4 cup powdered sweetener
- 1/4 cup thickened cream
- 1/4 cup peanut butter
- 1-2 tsp vanilla essence
- Sugar free strawberry/raspberry jam
- 100g justine's keto chocolate chips
- 1 tsp coconut oil
Method
- To make the cheesecake mixture, beat cream cheese until smooth.
- Add sweetener, cream, caramel and peanut butter and beat again until combined and smooth. Set aside
- Spread about a tablespoon of cheesecake mixture onto each cookie.
- Place a small indent in the centre of the cheesecake part of the cookie and fill with a tsp of jam. Place in the freezer for about 15 mins
- In the meantime, melt the chocolate and coconut oil together in the microwave for 30sec intervals until smooth.
- Dip each cookie in the chocolate ensuring the entire ‘dome’ part of the cheesecake and jam are covered. Freeze for 15mins.
- Can be stored in the fridge or freezer. Enjoy!
