Mona's Keto PB&J Cheesecake Cookie Surprises

 These PB&J Cheesecake Cookie Surprises by Mona (@goketo4kat on Instagram) are the perfect keto pick me up! 

"Happy Monday! Can’t believe I haven’t shared this with you guys yet 🤦🏻‍♀️ I was having a play in the kitchen with some leftover PB cheesecake mixture and this was the end result. Sooooo good and definitely something I’ll be making again.

I used a mini Justine's protein cookie for the base. I absolutely love how versatile these cookies are, not just on its own but how I can incorporate them into my keto desserts 😍🤤"



  1. To make the cheesecake mixture, beat cream cheese until smooth.
  2. Add sweetener, cream, caramel and peanut butter and beat again until combined and smooth. Set aside
  3. Spread about a tablespoon of cheesecake mixture onto each cookie.
  4. Place a small indent in the centre of the cheesecake part of the cookie and fill with a tsp of jam. Place in the freezer for about 15 mins
  5. In the meantime, melt the chocolate and coconut oil together in the microwave for 30sec intervals until smooth.
  6. Dip each cookie in the chocolate ensuring the entire ‘dome’ part of the cheesecake and jam are covered. Freeze for 15mins.
  7. Can be stored in the fridge or freezer. Enjoy!
