INGREDIENTS

5x Justine’s Forty Thieves Peanut Butter Protein Cookie Bars

3 tbsp coconut oil (melted)

1/2 cup soft dates (soaked in hot water if needed)

1/3 cup natural peanut butter

1–2 tbsp water (to blend)

1/3 cup roasted peanuts (roughly chopped)

100g sugar-free or dark chocolate (melted)
METHOD

Break the protein cookie bars into chunks and blend with melted coconut oil until you get a sticky, crumbly texture. Press firmly into a lined loaf tin and refrigerate.

Make the caramel by blend dates, peanut butter, and a splash of water until smooth and spreadable. Spread the caramel layer evenly over the base.

Sprinkle chopped roasted peanuts on top of the caramel.

Melt your chocolate and pour it over the top layer. Use a spoon or spatula to smooth it out.

Refrigerate for at least 1 hour until firm. Slice into bars and enjoy your macro-friendly Snickers-style treat.
