A healthy twist on a peanut butter lover's favourite!
- 300g Justine's Vegan Peanut Butter Everyday Protein Cookies
- 100g Butter
- 3 Tsp Erythritol
- 1 cup smooth peanut butter
- 250g Dark Chocolate
- Break up the cookies into a bowl and crush until crumbs
- Melt the butter and add it to the crumbs
- Add the Erythritol and one-third of a cup of the the peanut butter and mix well
- Pour mixture into a deep slice dish and press it firmly into the tray
- Melt the dark chocolate with another third of a cup of the peanut butter and pour over the cookie base.
- Take the remaining peanut butter and place in dots on top of the chocolate and use a skewer to get creative and make a peanut butter swirl or pattern in the chocolate.
