
Protein Mini Cookie Cups (No Bake, High Protein)
Looking for a quick, no-bake high protein snack that actually tastes like dessert? These Protein Mini Cookie Cups are made using Justine’s Mini Protein Cookies and are packed with protein from Greek yoghurt and vanilla protein powder. They’re perfect as a fun breakfast, snack, or post-dinner treat - and with fresh fruit on top, they’re as pretty as they are delicious.
Protein Mini Cookie Cups (No Bake, High Protein)
Ingredients
• 6 Justine’s Mini Protein Cookies (any flavour)
• ½ cup Greek yoghurt
• ½ – 1 scoop vanilla protein powder
• Chopped fresh fruit (we used strawberries and kiwifruit)
Method

Microwave Justine’s Mini Protein Cookies for 15–30 seconds until soft.

Press each cookie into a muffin tin slot to form a cup shape (tip: use the end of a rolling pin or similar tool to press evenly).

Place cookie cups in the fridge to set and firm up.

Meanwhile, mix Greek yoghurt and protein powder together in a small bowl until smooth and creamy.

Once cookie cups are set, gently remove them from the muffin tin.

Spoon the yoghurt mixture into each cookie cup.

Top with chopped fresh fruit or your toppings of choice, and enjoy immediately.
