Our mix is so versatile. You can make buns with no fruits or add the optional fruits of your choice & create your super low carb protein packed hot cross bun. Perhaps you want a chocolate version too? Try adding in some of our keto choc chips into your mix to give you that chocolate festive spice taste.

What you will need

  1. Justine's Keto Hot Cross Bun Mix 238 g
  2. 144 ML Warm Water 6 g Yeast (We Used Edmonds Active Yeast)
  3. 5 g Honey (Don’t Worry Yeast Eats the Sugars & Carbs!)
  4. 72 g Whole Egg
  5. 20 g Melted Butter
Optional
(Each 67 g Cooked Bun Will Have 3.9 g Carbs & 16 g Protein with These Optional Listed)
  1. 5 g Orange Zest Grated
  2. 30 g Pam’s Golden Berries
  3. Justine's Keto White Choc Chips Melted with A Touch of Coconut Oil for Crosses.

Instructions

• In a cup add the warm water which should be around 55 degrees.

• Add in the honey & yeast and mix well. Set aside for a few minutes (watch it froth!)

• Grab your electric mixing bowl & with the whisk hook, whisk the eggs until frothy and then add the melted (but cooled) butter.

• Now add the yeast mixture and Justine’s Easy Keto Protein Hot Cross Bun Mix & the optional orange zest & golden berries.

• Change whisking hook to a dough hook or standard hook if you don’t have a dough hook & mix for about 5 min.

• Rest dough in the bowl for 5 minutes to firm up as this mixture is quite sticky.

• Now is the time to clean up & heat oven to 190°c.

• With slightly wet hands (a tip here is to wet one hand & rub both hands   together), scoop out the mixture on to a clean bench & roll into a big ball.   Wetting hands helps handle dough as you go.

• Divide mixture into how many rolls you want & with wet hands weigh each portion out to get 6 evenly sized buns & roll into balls.

• If you don’t want exact even size buns omit weighing & continue to wet hands if needed & roll into balls.

• We made 6 buns with no fruits added. Each bun's raw weight was 76g & 67g cooked weight.

• Place the rolls on a baking tray lined with greaseproof paper.

• Bake for 25 minutes at 190 degrees till puffed up & golden brown.

• Cool on tray & when cold melt Justine’s Keto White chocolate with a touch of coconut oil & put in a piping bag & pipe your crosses!

• Serve & enjoy!

• Store any buns in an airtight container for up to a week.

Lovely texture and taste, just not spicy enough for me.

Good flavour, consistency needs work

I think they nailed the flavour and they're still a delicious, high protein Easter delight for us but with my second packet I think I'll try and bulk it with some coconut or almond flour to give a less elastic texture (presumably from it being primarily wheat gluten). Still think good flavour and desirable macronutrient spread considering higher protein vs higher fat.

Loved these hot cross buns , super easy to make , the smell and taste were amazing . They did puff up beautifully in the oven but shrunk down when they cooled as keto bread usually does . Amazing toasted the next day !

Delicious Keto Hot Cross Buns

Yum! So nice to have my own hot cross buns for Easter. I changed it up a little and made the dough in my breadmaker, and then cooked them. Easy peasy!

I made my Hot Cross Buns this morning and they're yummy! However, I don't use yeast very often, and discovered that my yeast was way out of date, but had to go ahead, as I don't go out to the shops on a whim.
My buns rose, and were springy and looked amazing when finished cooking, but then they deflated and looked like giant raisins! They still taste beautiful, and are nice and chewy.
I will buy another packet, and in the meantime, will get some fresh yeast!
