Mini Keto Protein Cookie Ice Cream Christmas Trees Ingredients
Makes 6 Christmas Trees
- 6 Justine’s Mini Protein Cookies in your favourite flavour.
- 200g Justine’s Keto Dark Choc Chips
- 1 Tablespoon Coconut Oil
- Keto Ice cream (store bought, or make your own with the recipe below
Homemade Keto Ice cream
If you'd like to make your own keto icecream for this recipe, use the following recipe. If using store bought keto ice cream, skip this section.
Keto Ice cream Ingredients
- 600 ml Creme fraiche
- 100 ml coconut milk
- 35g Justine’s Keto Friendly erythritol
- ½ teaspoon Vanilla extract
- 3 teaspoons Vegetable glycerine (optional, but keeps ice cream soft)
Keto ice cream Method
Mix all the ingredients together in a large bowl.
Pour into an ice cream maker and churn according to the manufacturer's instructions.
Pour into a container and freeze for a minimum 2 hours or until firm.
Mini Keto Protein Cookie Ice Cream Christmas Trees Method
Put home made or softened store bought ice cream in a piping bag (a snap lock bag with the end snipped off works great here too!).
Pipe on top of Justine's Mini Keto protein cookies in a spiral cone shape to form the "tree"
Pop cookie trees into the freezer for 2 hours or until the ice cream is firm.
Next, add Justine's Keto Dark Choc Chips and coconut oil to a microwave safe bowl and heat in the microwave in 30 second increments, stirring between each, until fully melted.
Remove cookie trees from freezer and coat in the melted chocolate mixture
Refreeze until ready to serve & enjoy!
