Each bite packs protein, healthy fats, and berry bliss with zero added sugar. Whether you're keto, low carb, or just looking for a better snack option, this one’s easy, freezer-friendly, and seriously good.

These bites are gluten free, low sugar, high protein, and the best part? You only need a few ingredients and a muffin tray.

  1. Line a muffin tray with liners or use a silicone tray for easy removal.

  2. Place one mini cookie into the base of each muffin hole – they fit perfectly as the base.

  3. Spoon a teaspoon of peanut butter over each cookie and spread gently.

  4. In a small saucepan, heat raspberries, sweetener, and lemon juice over low heat until broken down and syrupy (around 5–7 minutes).

  5. Let the raspberry mix cool slightly, then spoon it over the peanut butter layer.

  6. Pop the tray into the freezer for at least 1 hour, or until firm.

  7. Store in an airtight container in the fridge or freezer and enjoy straight from chilled.
